The origins of ice cream are somewhat murky, but its invention is generally attributed to ancient civilizations. The earliest known version of a frozen dessert resembling ice cream dates back to China around 618–907 AD, where a mixture of milk and rice was frozen in snow.
It is believed that ice cream as the world knows it now was an Italian creation – yet a 12th century Chinese ode, written by poet Yang Wanli in praise of an icy, crunchy refreshment that “appears congealed and yet it seems to float”, suggests something similar was being enjoyed in China as early as the ninth century.
The origins of ice cream are often traced back to ancient China, where they used ice and milk to create early frozen desserts. However, the modern version of ice cream, as we know it today, was developed in Europe, particularly in Italy and France, during the Renaissance period.
