Xiao long bao, also known as soup dumplings, are a type of dumpling that originates from Shanghai. What sets them apart from other dumplings is their delicate, thin wrapper and the inclusion of a savory broth inside the dumpling. When steamed, the gelatinous filling melts into soup, creating a burst of liquid when bitten into. The filling usually consists of pork and a flavorful broth made from meat stock or gelatine, which turns to liquid during cooking.
