Ajinomoto is the brand name for a popular food additive known as monosodium glutamate (MSG). MSG is made by fermenting starches, typically from corn, sugar cane, sugar beets, or tapioca, through a natural fermentation process. This process produces glutamic acid, which is then combined with sodium to form monosodium glutamate. MSG is commonly used as a flavor enhancer in various cuisines around the world. It is generally considered safe by regulatory agencies like the FDA. While some people may have mild reactions, overall, it’s safe for most when consumed in moderation as part of a balanced diet.

Ajinomoto, commonly known as monosodium glutamate (MSG), is made from the sodium salt of glutamic acid, an amino acid found naturally in many foods. It’s used as a flavor enhancer in cooking.

Concerns about its health effects arise from reports of adverse reactions like headaches, sweating, and nausea in some individuals, especially when consumed in large amounts. However, scientific studies have not consistently supported these claims, and regulatory bodies like the FDA classify MSG as generally recognized as safe (GRAS) when consumed in normal amounts.

The perception of MSG as unhealthy largely stems from anecdotal reports rather than conclusive scientific evidence. However, individuals sensitive to MSG may experience adverse reactions, so it’s essential to be mindful of personal tolerance levels.
