    In practice, liquid nitrogen is used to cool or freeze food very quickly, especially in food processing and sometimes in restaurants. It’s extremely cold, so it freezes food almost instantly without ruining the texture. That’s why it’s used for flash-freezing and those dramatic smoky effects you see.

    Regular refrigerators don’t use this, isntead they rely on refrigerant gases.

    Liquid nitrogen is used as a commercial refrigerant to flash freeze foods. Nitrogen boils at – 196 0 C .
