The type of carbohydrate that can be digested by ruminants but not by humans is cellulose.
Ruminant animals such as cows, buffaloes, goats, and sheep have special microorganisms in their rumen that produce the enzyme cellulase. This enzyme helps break down cellulose present in grass and other plant materials into simpler substances that the animals can use for energy. Humans do not produce cellulase and therefore cannot digest cellulose. It mainly acts as dietary fibre in the human digestive system.
