Making a classic Spanish tortilla, also known as a Spanish omelet, is relatively simple but requires some attention to detail for the best results. Here’s a step-by-step recipe:
Ingredients
4 large eggs
2 large potatoes (Yukon gold or russet are good choices)
1 large onion (optional)
Salt to taste
Black pepper to taste
Olive oil
Instructions
Prepare the Potatoes and Onion:
Peel the potatoes and slice them thinly (about 1/8 inch thick).
If using onion, slice it thinly as well.
Cook the Potatoes and Onion:
Heat a generous amount of olive oil in a large non-stick skillet over medium heat.
Add the sliced potatoes and onion (if using) to the skillet.
Cook slowly, stirring occasionally, until the potatoes are tender and cooked through. This usually takes about 20-25 minutes. The potatoes should be soft but not browned.
Drain the Potatoes:
Once cooked, drain the potatoes and onion from the oil. You can use a colander or a paper towel-lined plate to remove excess oil.
Prepare the Egg Mixture:
In a large bowl, beat the eggs and season with salt and pepper.
Add the cooked potatoes (and onion if used) to the bowl and gently mix to combine.
Cook the Tortilla:
Wipe out the skillet and add a small amount of olive oil. Heat over medium heat.
Pour the potato and egg mixture into the skillet and cook for about 5-7 minutes, or until the edges start to set and the bottom is golden brown.
Using a large plate, carefully flip the tortilla. To do this, slide it onto the plate, then invert the skillet over the plate and flip it together. Cook the other side for another 5-7 minutes until it’s set and golden brown.
Serve:
Slide the tortilla onto a cutting board and let it cool slightly before slicing. It can be served warm, at room temperature, or cold.
Tips
Cooking Time: Be patient while cooking the potatoes; they should be tender but not crispy.
Oil: Don’t skimp on the olive oil during the cooking process; it helps in achieving a smooth texture and flavor.
Flipping: If you’re nervous about flipping the tortilla, you can use a large plate or lid to help turn it over.
