Depending on the filling, profiteroles can be sweet or savory, making them versatile treats for serving at different occasions or satisfying a sweet tooth.Chef Antonin Carême, who was–and still is–highly regarded as one of the most influential French chefs in history, popularized profiteroles in the 19th century by adding a cream filling and warm caramel topping. He took the pastry one step further by towering them atop one another into what would become the croquembouche.

When the almonds are finely ground, the oil in the nuts combines with the sugar and egg whites, transforming the mixture into smooth, pliable marzipan that’s easy to mold or roll into a flexible sheet.Marzipan has a very sweet, nutty almond flavor. Its texture is soft, chewy and slightly rough due to the ground up almonds.Marzipan is sold in logs that are ready to be shaped into fruits, veggies or little animals as decorations – or just cut or rolled and dipped in chocolate. It can also be used like fondant to cover a cake.Marzipan is ready-to-eat, whereas almond paste is typically used as a baking ingredient, folded into pastries like cookies or croissants.

Gluten is a protein found in foods containing wheat, barley or rye. If you have celiac disease, eating gluten triggers an immune response to the gluten protein in your small intestine. Over time, this reaction damages your small intestine’s lining and prevents it from absorbing nutrients, a condition called malabsorption. The intestinal damage often causes symptoms such as diarrhea, fatigue, weight loss, bloating or anemia. It also can lead to serious complications if it is not managed or treated. In children, malabsorption can affect growth and development in addition to gastrointestinal symptoms. For most people, following a strict gluten-free diet can help manage symptoms and help the intestines heal.
