According to the American Egg Board, “Double-yolked eggs are often produced by young hens whose egg production cycles are not yet completely synchronized. They’re often produced too, by hens that are old enough to produce extra large-sized eggs. Genetics are also a factor.
Double yolks occur when a hen releases two yolks into the same eggshell, typically because of hormonal changes or irregular ovulation cycles. This is more common in younger hens whose reproductive systems are still maturing. Double-yolk eggs are considered a rare find and are often seen as a sign of good luck. They’re completely safe to eat and can make for a fun surprise when cracking open an egg.
