Cream can be separated from milk by either
centrifuging or by allowing whole milk to stand. Both methods work on the principle that cream is lighter than milk. Because cream is lighter than milk, it rises to the top when the milk is allowed to stand. The cream can then be removed by skimming the top layer off.
