Simple carbohydrates are sugars that are quickly digested and absorbed by the body, providing a rapid source of energy. Complex carbohydrates, on the other hand, consist of longer chains of sugar molecules and take longer to digest, providing a more sustained source of energy. Foods high in complex carbohydrates also tend to be higher in fiber and other nutrients.
